Signature Dish: The Buzz Coffee House’s folded eggs and flat white

NANAIMO — A popular local coffee favourite is branching out and seeking inspiration half a world away.

The Buzz Coffee House’s new Rutherford Rd. location also came with a change to their inside decor and menu, drawing on trends in Australian coffee houses for its food and drinks menu.

Their folded egg breakfast combined tomatoes, avocado, feta and a soft-cooked omelette on a thick piece of sourdough bread.

“We got ourselves the recipe for folded eggs which is a staple down (in Australia) for breakfast,” Phil Baker, co-owner of The Buzz, said. “It’s vibrant, bright, it’s definitely something we felt best represented us as we move into our new space.”

He said it wasn’t in their best interest to do a regular breakfast comprising of bacon and eggs already done well elsewhere by other coffee houses and restaurants.

“We decided to present Nanaimo with a little bit of a challenge, introduce you to some new flavours and new techniques to making food.”

It’s paired with one of the simpler coffee drinks available, a flat white.

Baker said the drink, another down-under staple, is comprised of whole milk with two shots of espresso and served with minimal foam on top.

“In the industry nowadays, the trend is more towards those traditional, basic staple coffees. People are moving away from the syrups and all the extra frills and are focusing more on the actual coffee and the technique that’s used to make it.”

The limited number of ingredients to make the drink mean each one has to shine and be treated well.

“You’ve got to have the right technique, you’ve got to get the right spin on the milk, you’ve got to get the temperature correct, the aeration,” Baker said. “If you espresso shot is too long or too short, it’ll affect the flavour so each and every coffee has to be made with just the right amount of precision.”

Baker’s decision to lean on Australian inspiration wasn’t a random one. He spent a few years in Australia, specifically exploring cafés in coffee-mad Melbourne.

He said he took away their passion, energy and knowledge and aims to apply that to every cup served at The Buzz.

A refreshed interior was also on the menu when the coffee house made a move earlier in 2021.

Darker decor has made way for a light, bright, open-concept design at their new location near the intersection of Rutherford Rd. and Hwy. 19A, something again borrowed from trendy Australian cafés.

The Buzz Coffee House is open Monday to Friday, 7 a.m. to 5 p.m. and on weekends from 8 a.m. to 5 p.m. at 4890 Rutherford Rd.
