Signature Dish: Extreme Eatery’s A-B-C Burger

NANAIMO — A blend of some unique ingredients has created one of the Island’s most impressive chicken burgers.

The A-B-C Burger at Extreme Eatery in Parksville is a great balance between sweet and salty, pairing a breaded chicken breast with candied bacon and an apple slaw. It’s piled high on a toasted brioche bun and topped with their signature ‘EE’ sauce.

Extreme Eats owner and chef Kymon Giakoumakis said many of their ingredients are sourced close to their Parksville restaurant and food truck.

“We get our ground beef ground for us every day from Eat Fresh market, who uses local beef. We use their local eggs from Springford Farms (in Nanoose), Gunters Bacon out of Comox. We like to use as many local ingredients as we can, especially through the pandemic, it’s really important.”

A successful area food truck business for nearly a decade, Giakoumakis took over about five years ago and made a decision to move into a storefront in late 2019.

Despite several pandemic-related closures and impacts to their business, the move has only helped grow the Extreme Eats brand.

“A lot of people were asking where we were parked over the winter so we brought our food truck to bricks and mortar, do them both and so far it’s been successful.”

The permanent, bigger kitchen at the restaurant has allowed Giakoumakis to expand the menu and offer different specials and feature items.

“In the evenings we have greek food, spanakopita, chicken and lamb souvlaki. We also do sliders and nachos, which we don’t normally have in our food truck. It’s not something you’d come to four times a week but once a week you get a nice greasy burger, a warm poutine or whatever, it just keeps you coming back for that comfort.”

A selection of milkshakes and other cold drinks compliment a simple menu, with their most popular offering being a Caesar piled high with different toppings including chicken wings and a slider.

Giakoumakis also offers catering services and has worked on several area TV and film productions over the years. He’s worked in the food industry since he was 13 years old when he started as a dishwasher, working his way up the ranks.
